Grape Variety: 100% Chardonnay
Region: South Australia
Vinification: Fermentation was 100% wild, with each barrel an individual ferment. Following primary fermentation, barrels were left to complete a natural malo-lactic fermentation. During this time the barrels were stirred weekly to suspend the lees, giving the wine added texture and flavour.
Ageing/Maturation: The wine is fermented and matured for nine months in a mix of new (30%) and 1-4 year old French oak barrels
