Vinification: Hand harvested into small boxes. Best parcels of Grenache from the Coume de Roy and Bac de Genievres are open fermented in 500L new oak barrels. Remainder of Grenache from Bac de Genievres and the Carignan from La Roque are fermented in stainless steel. Post fermentation, skins are left to macerate for a further 2-3 weeks to continue to build tannin extraction. Finished wine is drained off into barrels.

Ageing/Maturation: Aged in 225L and 500L barrels (1/3 new, 1/3 are 1 year old, and 1/3 are 2 years old) for 14-18 months before being blended, bottled and shipped for sale.

A delightful wine, which is in a fresher style than some earlier vintages showing real roundness and softness with rich red fruits and spice. A dazzling bright red, with more cherry and plum fruits on the nose than previous vintages, alongside cinnamon and spice, with a touch of fennel. The black schist soils gives the wine a smoky element. The flavour is vibrant, but smooth and round at the same time. There is a distinct freshness that cuts through the generous fruit. The finish is intense, and long-lasting.

Making wine in the hottest and driest part of France means that our grapes ripen very well, and we make a deeply coloured, full-bodied style of red wine,and the occasional white wine.

Our main wine is simply called ‘Domaine of the Bee’, and we have produced this in every year since 2007. The blend varies a little from year to year, but it is essentially a 15% alcohol, Grenache / Carignan blend, aged in oak barrels for just over a year. We normally make between 2,000 and 5,000 bottles, and a few magnums (2012 vintage). For information about each individual vintage, please visit our ‘shop’, and click on the individual wines.

In 2009, we launched a top cuvée, made from the best barrels from our oldest and finest vineyard in Maury’s famous Coume de Roy. It is a ‘field blend’ (ie different grape varieties are all mixed together in the vineyard), with the majority being Grenache Noir, but with significant amounts of Carignan, Grenache Gris, and various unknown white grape varieties.

We call this wine ‘Les Genoux’ (French for ‘The Knees’) as it is the very best wine we can make.

[for those of you not familiar with the English vernacular, ‘The bee’s knees’ is an expression that means ‘the very best’, thought by some to be a corruption of ‘the business’, and by others a shortening of ‘The Bee all and End all’ or ‘The B’s and E’s’]

In 2014, we launched our first white wine, ‘The Field of the Bee’, from the 2013 vintage and made from local Roussillon grapes; Grenache Gris and Grenache Blanc.
