Grape Variety: 100% Chardonnay
Region: South Australia
Appellation: Adelaide Hills
Vinification: The fruit was hand picked then kept in cold storage at two degrees for several days. After, the whole bunch and whole berry pressings were sent straight to barrel with a mix of barriques and puncheons with 20% new oak. The juice was fermented naturally and encouraged to warm gently. Post ferment partial malolactic fermentation occurs where required to soften the often-high acidity.
