Vinification: On arrival at the cellar the grapes are lightly crushed and destalked before being pumped to our pneumatic tank presses where 8 hours of skin contact is allowed for maximum extraction of varietal character. Gentle pressing and fraction separation are utilized to limit phenolic content. After a 48 hour settling the fresh juice is racked into cold fermentation with a neutral yeast.
Ageing/Maturation: Lees contact is limited and bottling occurs early to capture the freshness of the grape.
Sweetness: 2.22 g/L
Villiera Bush Vine Sauvignon Blanc 2014
The wine focuses on the greener spectrum of varietal character. The bunches hang in the shade and harvesting occurs early to ensure a refreshing style, displaying green pepper and fig with some smokiness. The wine is intensely flavoured with good structure with age it develops asparagus like aromas and on the palate it softens.
Cousins Jeff and Simon Grier started the family-owned Villiera Wines outside Stellenbosch in 1983 and embarked on an extensive replanting of classic and local varietals. Cathy Brewer (née Grier) later joined the family team to head up the sales, marketing and export divisions. The introduction of hi-tech cellar facilities for the production of still wines as well as Méthode Cap Classique combined with a unique wine business philosophy has seen Villiera developing into one of the largest private wineries in the country.
Award-winning winemaker Jeff Grier crafts a range of wines characterized by a strong reflection of Villiera's unique terroir and the retention of the distinct aromas and flavours of the different varietals. The Griers have been pioneers in the Cap Classique category and their innovative approach has been evident other categories as well as in their business.
